Tzatziki: Creamy Cucumber Lemon Dip

Ingredients
- ½ cup grated cucumber
- 1 cup whole milk Greek yogurt
- 1 tbsp lemon juice
- ½ tbsp olive oil
- 1 garlic clove, finely minced
- ¼ tsp salt
- 1 tbsp chopped dill
- Optional: 1 tbsp chopped mint
Instructions
- Grate cucumber using the largest round holes of your cheese grater.
- Use a towel to gently squeeze out the excess water from the cucumber – this will keep your dip from getting runny!
- In a mixing bowl, stir together all ingredients. Enjoy right away or leave in the fridge for a few hours for all the flavors to marinate together.
