Spinach Feta Meatballs

Ingredients
- 6-8 oz of spinach
- 2 tbsp olive oil
- 1 lb ground turkey or beef
- ½ cup breadcrumbs, or ground almonds
- ¼ tsp garlic powder
- Freshly cracked pepper
- ¼ tsp salt
- 1 large egg
- 2 oz feta cheese, crumbled
Instructions
- Roughly chop the spinach. Heat a large skillet over medium, then add 1 tbsp olive oil. Add chopped spinach with a pinch of salt. Sauté the spinach until it has fully wilted, then remove it from the heat.
- While the spinach is sautéing, stir together the breadcrumbs, garlic powder, and cracked pepper and a pinch of salt in large bowl.
- Lightly whisk the egg and add egg, ground meat, spinach, feta and bread crumb mixture until evenly combined.
- Shape the meat mixture into balls, about 1 tbsp each, should make approx. 24.
- Wipe out skillet and add 1 tbsp oil, heat over medium heat and swirl the oil, add half the meatballs, and cook till browned and then turn over. Cook thru about 6-8 minutes. Repeat with second batch.
- Serve with your favorite sauce over sautéed greens, in a salad, or with some roasted squash.
