Roasted Balsamic Brussels Sprouts

Ingredients
- 2 lb brussels sprouts, sliced in half
- 6 garlic cloves, peeled and chopped into large chunks
- 1/4 cup olive oil
- 3 tbsp balsamic vinegar (a thick syrup vinegar is recommended, but any will work)
- A few pinches of salt and pepper
Instructions
- Preheat oven to 425F.
- Place a piece of parchment paper on a large metal baking sheet.
- Place sprouts and garlic in a large bowl.
- Mix together the oil, vinegar, salt, and pepper in a jar. Pour onto the sprouts and garlic and mix it all together well with your hands until veggies are coated well.
- Dump the mixture onto your baking sheet and spread the sprouts out evenly.
- Roast in oven until they are fork tender and slightly crispy, about 25-30 minutes.
