Chard, Eggs and Cheese

Ingredients
- 1 bunch Swiss chard
- 4 spring/green onions
- 1/8 cup of shredded cheese of your choice
- 6 eggs
- 1 tbsp olive oil
- 1 tsp garlic powder or 1 tbsp minced garlic
- 1/2 tsp salt, pepper to taste
Instructions
- Heat oil in a large skillet over medium-high heat. Slice green onions and stems of the Swiss chard into thin pieces. Cook in oil for 2 minutes.
- Stir in chard leaves and cook until wilted.
- Whisk eggs and add in seasonings and cheese. You can cook eggs separately, or pour them into the skillet with vegetables, and cook with a cover for 3-5 minutes until eggs are firm.
