Cauliflower Mashed Potatoes

Ingredients
- 1 head of cauliflower or bag of frozen cauliflower
- 2 tbsp heavy cream
- 2 tbsp butter
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Cut head of cauliflower into 4 large pieces and boil in water on the stove until it is soft (fork will poke through the cauliflower easily). Can steam or boil cauliflower that was in a frozen bag as well.
- Remove from heat and drain the water from the pot.
- Add the cream and butter. Mash with a potato masher, fork, or immersion blender/blender if available.
- Season with salt and pepper. Can top with gravy, chives, etc.
