Baked Sweet Potatoes

Ingredients

  • Sweet potatoes (2 lb = 6 servings)
  • 1 tbsp olive oil
  • Topping Options: cinnamon and pecans, paprika, sour cream, thyme and rosemary

Instructions

  1. Preheat oven to 400 degrees.
  2. Wash and dry sweet potatoes.  Rub with olive oil.  Poke 4-5 times with a sharp knife.
  3. Place sweet potatoes on a baking sheet.
  4. Bake for 30-45 minutes, until a fork goes into the sweet potato easily.
  5. Serve plain or with a topping.
